MEGAN LAMBERT is a Senior Instructor at Johnson & Wales University in the College of Culinary Arts. She is a Registered Dietitian and is currently working on her MS in Nutrition at East Carolina University. She says, "My husband is from Veracruz, Mexico, and I have enjoyed visiting, eating, and cooking there any times. I love working with the Hispanic community; there are so many naturally delicious and healthy foods that are traditional to their cuisines. I like helping people find culturally appropriate ways to combat obesity." Megan enjoys gardening at home, experimenting with unusual varieties that are hard to find at stores, and using them to develop quick, healthy meals, usually with an ethnic twist. "As a busy mom I understand how hard it is to get nutritious food on the table that everyone will enjoy, and not falling into a boring routine. Even as a dietetics and culinary professional I still struggle with it, so I can imagine how difficult it could be for someone without my experience and training.

DON ROSENBERG is the owner of Instant Organic Garden, a business that installs raised bed vegetable gardens throughout the Carolinas. He is a North Carolina Master Gardener with over 30 years of organic gardening experience.
